A Dutch oven traps steam. That's the whole trick. It's why your loaf springs, why the crust shatters instead of splintering, why the ear opens dramatically along the score. But you don't need one — you need steam and enclosed heat for the first 20 minutes. There are at least three ways to get both without spending $80 on a cast iron pot.

I've baked all three of these methods in the same week using the same dough (500g bread flour, 75% hydration, 20% starter, 2% salt) to compare directly. The results are closer than most people think, but each method has a real tradeoff. Here's what actually works.

Why the Dutch oven works in the first place

Understanding the mechanism matters because it tells you what to replicate.

When dough hits a hot surface in a sealed environment, water evaporates off the crust and gets trapped. That humid atmosphere does three things: it keeps the crust soft and stretchy so the loaf can expand (oven spring), it gelatinizes the surface starches for a glossy finish, and it delays crust formation so the score can bloom. After about 20 minutes, you want the opposite — dry heat to set the crust and develop color.

Any method that gives you a hot surface, a source of steam, and something enclosed enough to hold that steam for 20 minutes will produce a comparable loaf. That's the entire brief.

Method 1: Baking steel or stone with a steam pan

This is the closest match to a Dutch oven in performance, and it's my go-to now for batards because they don't fit in my 5-quart pot.

What you need

  • Baking steel (ideal) or a thick pizza stone on the middle rack
  • A metal roasting pan or cast iron skillet on the bottom rack
  • A cup of boiling water, or a handful of lava rocks preheated in the pan
  • A spray bottle for the loaf itself

How to do it

Preheat the steel and the empty steam pan at 500°F for a full 45 minutes. Stones need 60 minutes — they hold less heat per volume than steel. Boil a kettle right before you're ready to bake.

Slide your scored loaf onto the steel using parchment or a peel. Immediately pour a cup of boiling water into the preheated pan and shut the door fast. Give the loaf two or three quick spritzes on the way in if you want extra insurance.

After 20 minutes, pull the steam pan out, drop the oven to 450°F, and bake another 20–25 minutes until the internal temp hits 208–210°F.

Where it goes wrong

The first time I tried this, I used a shallow sheet pan for water and got maybe 3 minutes of steam. Not enough. You need a deep pan (2+ inches) and either boiling water or preheated lava rocks. Cold water on a hot pan produces less steam than boiling water on the same pan — counterintuitive but true, because room-temperature water absorbs heat before it evaporates.

Method 2: The inverted bowl or roasting pan cloche

Cheap, effective, and how bakers made hearth-style loaves before cast iron cookware became fashionable.

What you need

  • A large stainless steel or oven-safe glass bowl, OR a deep roasting pan flipped upside down
  • A baking sheet, stone, or steel underneath
  • The bowl needs to be tall enough to clear your loaf's oven spring — 5 inches minimum

How to do it

Preheat the baking surface at 500°F for 45 minutes. Preheat the bowl too if it's metal — glass can shock and crack, so leave Pyrex out.

Load the loaf onto the hot surface, spritz it 4–5 times with water, and immediately cover with the inverted bowl. The steam from the dough itself, trapped under the bowl, does most of the work. If you want more, drop 2–3 ice cubes on the baking surface next to the loaf just before covering.

After 20 minutes, remove the bowl and finish baking uncovered at 450°F for 20–25 minutes.

The tradeoff

Bowl size limits loaf size. My stainless mixing bowl gives me about 7 inches of diameter and 5 inches of clearance — fine for a 500g boule, tight for anything bigger. And you have to remove a screaming hot bowl mid-bake, which requires good mitts and a clear staging area.

I've had one bake where the bowl clearance wasn't enough and the dough pressed against the top, leaving a flat crown. If your loaves are averaging 4.5 inches of oven spring, you need 5.5 inches of clearance minimum.

Method 3: The two-tray steam sandwich

Best for beginners because it uses equipment you already own.

What you need

  • Two rimmed baking sheets of the same size
  • Parchment paper
  • A spray bottle
  • Binder clips (optional but helpful)

How to do it

Preheat one sheet in the oven at 500°F. Shape and score your loaf on parchment on the counter. Pull the hot sheet out, slide the parchment onto it, spritz the loaf heavily (8–10 sprays), then invert the second sheet on top like a lid. If you have oven-safe binder clips or metal clamps, clip the two sheets together at the corners for a tighter seal.

Bake covered for 20 minutes, then remove the top sheet and continue at 450°F for 20–25 minutes.

Honest assessment

This produces the softest crust of the three methods because the seal isn't as tight — some steam escapes. Oven spring is 85–90% of what I get from a Dutch oven with the same dough. For sandwich loaves or everyday bread, totally fine. For a crackling artisan crust with a dramatic ear, this method is the weakest of the three.

The steel-and-steam-pan method genuinely rivals a Dutch oven and lets you bake any shape. The inverted bowl is the best value. The two-tray method is where I'd start if you're not sure you're staying with sourdough long enough to justify buying anything.

What to check regardless of method

Loaf temperature at the end. 208–210°F internal for a fully baked loaf. Underbaked bread with a beautiful exterior is a common failure mode when you're troubleshooting a new setup.

Surface temperature at load. Not oven temperature — surface temperature. Ovens lie. A cheap IR thermometer aimed at the steel or stone should read 480°F+ when you load. Mine reads 30–40 degrees lower than the oven display, consistently.

Score depth. With less aggressive steam than a Dutch oven, a shallow score can seal shut before the loaf springs. I score about 1/4 inch deep for Dutch oven bakes and 3/8 inch for these methods to compensate.

Common questions

Can I use a slow cooker insert or Pyrex casserole instead?

The ceramic insert from a slow cooker works well — treat it like a Dutch oven. Pyrex is risky at 500°F preheats; some brands rate their glass to 425°F max. Check the manufacturer specs before you subject a $30 dish to a thermal shock test.

Do I really need to preheat for 45 minutes?

Yes for steel, yes for stone, yes if you want oven spring comparable to a proper Dutch oven bake. Ovens hit temperature long before the baking surface does. I've timed my 1/4-inch steel and it takes 42 minutes to stabilize at 500°F, even though the oven signals ready at 12 minutes.

Why does my crust come out pale without a Dutch oven?

Two likely causes: not enough steam in the first 15 minutes (crust dried out before starches could gelatinize), or oven temperature dropped when you removed the steam source and never recovered. A pale crust after 40 minutes at 450°F usually means your actual oven temperature is 20–30°F below the dial. Get an oven thermometer.

Can I bake sourdough on a regular baking sheet with no steam at all?

You can bake it, but you won't get oven spring or a proper crust. The loaf will look and taste more like a hearth-baked country bread — dense-ish, matte crust, no ear. If that's what you want, fine. If you want the crackling artisan look, you need steam.

Which method works best for high-hydration dough (80%+)?

The steel-and-steam-pan setup. High-hydration doughs slack out more during loading and need aggressive steam to prevent premature crust formation. The two-tray method struggles above 78% hydration in my experience — the softer crust doesn't hold the shape as well.

Do I need to score differently?

Score slightly deeper (3/8 inch vs 1/4 inch) because the less-humid environment can seal scores earlier. A curved lame held at a 30° angle to the surface produces a better ear than a straight down cut, especially when steam is a little weaker than ideal.


If you take one thing from this: the Dutch oven isn't magic, it's a steam trap. Match the steam and the hot loading surface, and the loaf doesn't know the difference. The steel plus a deep pan of boiling water is the setup I've used for the last 60 or so bakes, and I stopped reaching for the Dutch oven months ago — it's still in the cabinet, but the steel handles batards, boules, and even the occasional baguette, and I don't have to wrestle a 15-pound cast iron pot in and out of a 500-degree oven every Saturday morning.
